Chicken & Vegetable Stir-Fry with Brown Rice

1 lb chicken breast, sliced thinly

Instructions

  1. Cook the rice: Cook the brown rice according to package instructions. Set aside.
  2. Stir-fry the chicken: Heat olive oil in a large pan or wok. Add the chicken and cook for 5-7 minutes, until browned.
  3. Add the vegetables: Add the bell peppers, broccoli, and carrot to the pan. Stir-fry for another 5-6 minutes, until vegetables are tender.
  4. Make the sauce: In a small bowl, mix together soy sauce, honey, and sesame oil. Pour the sauce over the chicken and vegetables, stirring to coat.
  5. Serve: Serve the stir-fry over brown rice and enjoy!
