Choco Sunrise Pancakes

Instructions

  1. Prepare Dry Ingredients: In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  2. Combine Wet Ingredients: In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until well combined.
  3. Make the Batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix – it’s okay if there are a few lumps. Gently fold in the 1/4 cup of chocolate chips.
  4. Heat the Pan: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter. You can use a paper towel to spread a thin layer of butter for a more even coating.
  5. Cook the Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. To achieve perfect round pancakes, you can use a ring mold or simply pour the batter in a controlled way. Cook for about 2-3 minutes until bubbles form on the surface and the edges look set, then flip and cook for another 1-2 minutes until golden brown on both sides. Repeat with the remaining batter.
  6. Drizzle & Serve: Stack the pancakes on a plate. Drizzle with additional melted chocolate and top with extra chocolate chips for that extra indulgence. Optional: Add whipped cream, sliced bananas, or berries for extra flavor.
  7. Enjoy: Serve hot with your favorite syrup or toppings for the perfect chocolatey breakfast or lunch.
