Almond Bliss Crepes

In a medium-sized bowl, whisk the eggs, almond milk, and melted coconut oil together.

Add the almond flour, salt, cinnamon (if using), baking powder, and vanilla extract. Stir until smooth. If you prefer sweeter crepes, fold in a tablespoon or two of honey or maple syrup.

Let the batter rest for 10-15 minutes. This allows the almond flour to absorb the liquids and makes for a better texture.

Heat the Pan:

Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with coconut oil or butter.

Once the pan is hot, pour in about 1/4 cup of the batter, tilting the pan in a circular motion to spread the batter evenly into a thin layer.
