Almond Bliss Crepes

These light, nutty, and slightly sweet crepes are perfect for breakfast, brunch, or a delightful dessert. They are easy to make and can be paired with a variety of toppings to enhance the flavor.

1 cup almond flour (finely ground)

Instructions

  1. Prepare the Batter:
  2. In a medium-sized bowl, whisk the eggs, almond milk, and melted coconut oil together.
  3. Add the almond flour, salt, cinnamon (if using), baking powder, and vanilla extract. Stir until smooth. If you prefer sweeter crepes, fold in a tablespoon or two of honey or maple syrup.
  4. Let the batter rest for 10-15 minutes. This allows the almond flour to absorb the liquids and makes for a better texture.
  5. Heat the Pan:
  6. Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with coconut oil or butter.
  7. Once the pan is hot, pour in about 1/4 cup of the batter, tilting the pan in a circular motion to spread the batter evenly into a thin layer.
  8. Cook the Crepes:
  9. Cook for about 1-2 minutes on the first side, until you see the edges start to lift and the top is set.
  10. Carefully flip the crepe using a spatula and cook the other side for another 30 seconds to 1 minute.
  11. Transfer the cooked crepe to a plate and repeat with the remaining batter, adding more oil to the pan as needed.
