  1. Make the Crepes
  2. Prepare the batter: In a large mixing bowl, whisk together the flour, sugar, and salt. In another bowl, whisk the eggs, milk, water, melted butter, and vanilla extract until well combined. Slowly pour the wet ingredients into the dry, whisking constantly until smooth. Let the batter rest for 30 minutes at room temperature.
  3. Cook the crepes: Heat a non-stick skillet over medium heat. Lightly grease with butter or oil. Pour about ¼ cup of batter into the pan, swirling to coat the bottom evenly. Cook for about 1–2 minutes per side until golden. Transfer to a wire rack to cool. Repeat until all batter is used. You should get about 20–24 crepes.
  4. Make the Pistachio Cream Cheese Frosting
  5. Cream the butter and sugar: In a large bowl, beat the room temperature butter and powdered sugar together until light and fluffy.
  6. Add flavorings: Mix in the vanilla extract, almond extract, and a few drops of green food coloring if desired.
  7. Incorporate cream cheese and cream: Add the firm cream cheese and beat until fully incorporated and smooth. Gradually add the heavy cream and beat until light and fluffy.
  8. Fold in pistachios: Gently fold in the finely ground pistachios until evenly distributed.
  9. Assemble the Cake
  10. Layer the crepes: Place one crepe on a serving plate. Spread a thin, even layer of pistachio cream filling on top. Repeat with remaining crepes and frosting, ending with a crepe on top.
  11. Decorate: Frost the top and sides of the cake lightly with any remaining pistachio frosting. Sprinkle extra crushed pistachios over the top for a beautiful finish.
  12. Chill and serve: Refrigerate the cake for at least 2 hours before slicing to help it set. Serve chilled for best texture and flavor!
